RAW APPLE CAKE 
2 c. coconut
1 c. chopped nuts
3 c. raw tart apples, cubed
2 c. sugar
3 c. plain flour
1 tsp. baking soda
1 c. raisins or dates
1 tsp. cinnamon
2 tsp. vanilla
3 med. eggs, well beaten
1 1/2 c. vegetable oil

Cream sugar and eggs until light. Add oil. Then dry ingredients. Add apples, nuts and coconut and raisins. Bake in tube pan at 325 degrees until firm. About 1 1/2 hours.

ICING:

1 c. brown sugar
1 stick butter, melted
1/4 c. sweet milk

Mix all together and cook until the bubbles burst. Cool and spread on cake.
