APPLE WALNUT COFFEE CAKE 
3 eggs
1 c. cooking oil
2 c. sugar
3 tsp. vanilla
3 c. flour
1 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. nutmeg
3 tsp. cinnamon
2 c. chopped apples
1 c. chopped walnuts

In large bowl beat eggs; add cooking oil, sugar, vanilla and cream together until fluffy. Add dry ingredients, mixing well. Add apples and nuts. Stir to evenly distribute.

Put in a floured and greased Bundt pan. Bake at 300 degrees for 45 minutes. Increase heat to 325 degrees and bake 20 minutes longer. Let cake cool 15 minutes and remove from pan.

OPTIONAL TOPPING:

3/4 c. brown sugar
1/2 c. shredded coconut
1/2 stick butter
1/2 c. nuts
1/4 c. milk
1/2 tsp. vanilla

Mix sugar, milk and butter. Bring to a boil. Add nuts, vanilla and coconut. Pour over cake as soon as it is removed from pan.
