APPLE, WALNUT, POPPY SEED COFFEE
CAKE
 
1/2 c. vegetable oil
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
3 tbsp. poppy seeds
1 c. sour cream
2 c. chopped apples
1 c. chopped nuts
3/4 c. brown sugar
1 tsp. cinnamon
4 tbsp. butter, melted

Preheat oven to 350 degrees. Grease and flour a 9 x 13 inch pan. Mix together the oil and sugar. Beat in eggs and vanilla and set aside. Sift together the flour, baking powder, soda and salt. Stir in poppy seeds. Add to oil mixture alternately with sour cream, beginning and ending with flour mixture. Fold in apples and pour into prepared pan. Combine remaining 4 ingredients and sprinkle over the batter. Bake 35-45 minutes. Cool in pan 10 minutes.
