CHICKEN YUM 
1 fryer, cut up or equiv. favorite pieces
1 (4 oz.) can mushrooms
1/4 c. Wesson oil
1 (16 oz.) can tomatoes
1 c. barbecue sauce
1 c. green pepper, cut in strips
1/4 c. pitted black olives
1/2 tsp. salt
1/4 tsp. pepper
3 c. hot cooked rice
2 tbsp. flour

Brown chicken in oil. Drain mushrooms, reserving liquid. Add the mushrooms, tomatoes, barbecue sauce, green pepper, olives and seasonings. Cover. Cook 30 minutes. Arrange chicken and vegetable over rice (keep warm). Gradually add mushroom liquid to flour, stir. Gradually add flour mixture to hot liquid in pan, stirring constantly until mixture thickens. Simmer 3 minutes. Serve over chicken, rice and vegetables. Unusually good flavors to accompany chicken.
