ELEGANTLY SCALLOPED POTATOES 
6 med. potatoes
2 c. shredded cheddar cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. chopped onion
Salt to flavor
1/4 tsp. pepper

Boil potatoes with skin on. Cool, peel and cut in cubes. In saucepan over low heat combine butter and cheese; stir until almost melted. Remove from heat and add remaining ingredients. Fold in potatoes and put in greased 2 quart casserole. Bake 25 minutes at 450 degrees. Can be covered with buttered crumbs before baking.
