FRESH VEGETABLE LASAGNA | |
8 uncooked lasagna noodles 1 1/2 sm. zucchini, sliced and quartered 2 carrots, sliced into thin rounds 1 med. red sweet pepper, sliced 2 green onions, sliced 1 c. skimmed ricotta cheese 1/2 c. grated Parmesan cheese 1 c. skim mozzarella cheese 16 oz. can Italian style tomatoes, chopped 16 oz. can tomato puree Salt and pepper to taste Spray skillet with Pam. When hot, add vegetables and stir fry for 5 minutes. Remove from heat. Spray 9 x 13 inch dish. Add 1/2 of uncooked noodles. Add 1/2 of other ingredients in layers (tomato pieces, puree, vegetables, ricotta and cheese). Add next layer of noodles and repeat. After everything is assembled, add 2 cups water. Cover with foil which has been sprayed with Pam. Bake at 350 degrees in preheated oven for 1 1/2 hours. Allow to set 1/2 hour before cutting. Excellent next day! |
