VEGETABLE LASAGNE 
6 c. Mozzarella cheese
1 (10 oz.) pkg. spinach
1 (10 oz.) pkg. sliced carrots
1 (10 oz.) pkg. broccoli
1 (10 oz.) pkg. cauliflower
8 oz. lasagne noodles

Cook, rinse and drain noodles. Cook vegetables as directed.

WHITE SAUCE:

1/2 c. butter
6 tbsp. flour
3 c. milk
1 onion, cut up & sauteed in butter, add nutmeg to taste
1/4 tsp. thyme
1/4 tsp. basil
1/4 tsp. oregano

In a saucepan, melt butter, stir in flour until smooth and gradually add milk, stirring until it comes to a boil and thickens. Add onion and spices. Add vegetables to white sauce. Layer vegetables, cheese and noodles. Bake at 350 degrees for 30 minutes.
