FRIED PIE CRUST 
2 qt. flour
2 1/2 c. shortening
2 lg. cans evaporated milk
3 tsp. salt
3 tsp. sugar
3 tsp. baking powder
4 eggs

Sift dry ingredients. Beat eggs; add milk and beat well. Pour into dry ingredients and mix thoroughly. Dough should be still like bread dough. You have to get your hands into this. If dough is too sticky, add more flour. Roll dough in wax paper and leave in refrigerator overnight.

Separate dough into 6 parts. On floured board, roll out dough, about the same thickness as pie dough. Cut into 6 inch circles. Fill with fruit pie filling, fold over and seal edges. Place in hot oil and fry on both sides until they are brown. Remove from skillet and drain. While they are still hot, roll in sugar and cinnamon.

Note: this recipe will make 6 dozen fried pies. you can halve this recipe. However, the pies freeze well.
