FRESH COCONUT CAKE 
1 1/2 c. sugar
2 eggs
1/2 c. (1/4 lb.) butter
1 3/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 c. buttermilk
3/4 c. coconut (add last)

Cream butter, sugar and yolks. Alternate with flour, baking powder, and salt. Dissolve baking soda into buttermilk. Alternate the dry ingredients with the wet. Beat egg whites until stiff. Fold into batter and add coconut. Use 9x13 inch pan. Bake at 350 degrees for 35 minutes.
