STIR - FRIED CHICKEN AND
MUSHROOMS
 
2 tbsp. peanut oil
4 garlic cloves, minced
1 tbsp. minced fresh ginger
1 whole boneless skinless chicken breasts, cut into strips
8 oz. mushrooms, sliced
1 jalapeno chili, minced
4 green onions, sliced
2 tbsp. soy sauce
Steamed rice

Heat oil in wok or heavy large skillet over medium-high heat. Add garlic and ginger and cook until golden, stirring constantly, about 30 seconds. Add chicken, mushrooms and chili; fry until chicken is cooked through, stirring constantly, about 5 minutes. Remove from heat. Mix in onions and soy sauce. Serve with rice.
