CHOCOLATE MOUSSE 
1/2 lb. sweet chocolate
3 tbsp. water
1/4 c. sugar
4 egg yolks
1 inch scraped vanilla bean OR 1 1/2 tsp. vanilla
4 egg whites

In top of double boiler over hot water melt chocolate, water and sugar. Mix well, remove and cool. Add, one at a time egg yolks mixing well after each addition. Add vanilla. Fold in stiffly beaten egg whites. Spoon in dessert pots or dishes and top with chipped cream. Serves 8.
