SWEET POTATO PIE 
2 c. sweet potatoes, cooked and mashed
2 c. sugar
1 egg, beaten
1 stick butter
1/2 c. canned cream
1/4 tbsp. nutmeg
1/2 tsp. cinnamon
1 1/2 tsp. vanilla
1 unbaked pie shell

Mix all ingredients; pour into pie shell.

Bake at 350°F until knife comes out clean when inserted in center of pie.

Note: If using canned potatoes, reduce sugar to 1 1/2 cups.
