BAKED SHREDDED CARROTS 
3 c. coarsely shredded carrots
1/4 c. coarsely chopped pecans
2 tbsp. melted butter
2 tbsp. orange juice
1 tbsp. lemon juice
1 tbsp. chopped chives
1/4 tsp. salt

Heat oven to 350 degrees. Grease a shallow 1-quart baking dish. Mix all ingredients in a bowl, then transfer to baking dish. Cover and bake for 30 minutes.
