FROZEN WALDORF SALAD 
2 eggs, slightly beaten
1/2 c. sugar
1/2 c. pineapple juice (reserved)
1/4 c. lemon juice
1/8 tsp. salt
1/2 c. diced celery
1/2 c. crushed pineapple, drained
2 med. apples, diced
1/2 c. nuts
1 c. Cool Whip

Combine and cook eggs, sugar, fruit juice and salt until eggs thicken; cool. When cool, add fruits and vegetables and nuts. Fold in Cool Whip. Freeze in individual cups (plastic bar cups work well). Freeze overnight. Serve in semi frozen state.
