STUFFED BAKED POTATO CASSEROLE 
2 med. or 1 lg. potato per person
Velveeta cheese, chopped
Onion tops (chives)
Bacon bits
Butter
Sour cream

Peel potatoes and chop into medium chunks. Put in casserole dish with butter to your own taste. Microwave until potatoes are done. Stir ever so often so potatoes will not stick.

After potatoes are done, add chopped cheese, chives, bacon bits and sour cream. Mix well. Return to microwave and bake until cheese is well done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
