TRIMMER CHICKEN TEMPURA 
1 whole egg
2 1/2 tbsp. polyunsaturated vegetable oil
2 1/2 tbsp. Japanese style soy sauce
Pinch ground ginger
7 tbsp. pancake mix
1 lb. skinned chicken breast cutlets
Sugarless Sweet 'N Sour Sauce

1. Preheat oven to very hot, 450 degrees. Spray a non-stick cookie sheet or shallow baking pan liberally with cooking spray (or wipe lightly with vegetable oil).

2. Combine egg, oil, soy sauce and ginger in a bowl; beat until blended. Sprinkle pancake mix on a shallow plate.

3. Cut chicken into 1 1/2" pieces. Roll each piece in the soy sauce mixture and finally in the pancake mix, until well coated. Arrange pieces in a single layer not touching on the cookie sheet.

4. Bake, uncovered and undisturbed, in preheated very hot oven, 450 degrees for 8 minutes or until golden and crisp. Serve with Sugarless Sweet 'n Sour Sauce, if you wish.

It did have good flavor. But the chicken never turned golden brown. I used a paper towel with olive oil, cause I ran out of spray but did use a non stick pan. I had to flip the chicken and cook longer. Better luck to others!
