MINUTE ASPARAGUS 
2 lbs. asparagus
4 tbsp. butter
1 lg. clove garlic, minced
1 tbsp. lemon juice
1 tbsp. reduced sodium soy sauce
Fresh ground pepper

Roll cut asparagus in 1 inch diagonals. Blanch for 1 minute in boiling water. Drain and shock under cold water. Melt butter in wok or skillet. Add garlic and stir fry, taking care butter does not brown. Add asparagus and stir fry briefly. Add lemon juice and soy sauce. Toss gently. Season with pepper. Serves 4-6.
