MINNESOTA PICKLES 
6 to 8 sliced cucumbers (peeled or unpeeled)
1 or 2 onions, sliced
1 green pepper, sliced
2 tbsp. salt
1 1/2 c. sugar
1 c. vinegar
1 tsp. celery seed

Combine cucumbers, onions and pepper and sprinkle with salt. Let stand 2 to 3 hours. Drain and rinse a few times. Mix sugar, vinegar and celery seed. Bring to a boil. Pour over cucumber mixture and refrigerate. Let set a day or so before eating. Can be frozen.
