COLD OVEN LEMON POUND CAKE | |
2 sticks butter 1/2 c. shortening 3 c. granulated sugar 4 lg. eggs 1 c. milk 4 tsp. lemon flavoring 3 c. all-purpose flour (measure then sift) Have all ingredients at room temperature. Grease and flour a large tube pan. Cream together butter and shortening. Slowly add sugar. Add eggs, one at a time, beating well after each one. Add lemon flavoring to milk. Add flour and milk alternately, mix well. Pour batter into a large tube pan. Start in a cold oven. Bake at 300 degrees for 1 hour. Turn oven to 325 degrees and bake 30 minutes longer. (The original recipe, as my aunt gave to me, said to bake for 1 hour at 275 degrees then at 300 degrees for 30 minutes. My cakes always fell when I used those temperatures). GLAZE: 1 c. powdered sugar Juice of 2 lemons or use bottled or frozen lemon juice |
