JONI'S CHICKEN RICE CASSEROLE 
4 or 5 chicken breasts (boneless, skinless)
1 cup quick-cooking rice (Minute Rice)
1 env. onion soup mix (Lipton)
1 (10 oz.) can cream of mushroom soup
1 (10 oz.) can cream of chicken soup
1 (4 oz.) can sliced mushrooms
1 cup milk
1 1/4 cups water
salt and pepper, to taste
1/4 cup minced onions
garlic powder, to taste

Preheat oven to 350°F. Grease 11x13-inch pan all the way up the sides. Set chicken aside.

Mix all ingredients in a large bowl. Make sure its blended thoroughly. Pour ingredients into greased pan. Place chicken breasts on top.

Bake at 350°F for about 60 minutes, checking to see if chicken is done (160°F internal temp.) and stir mixture under chicken as best as you can.

Note: Will thicken as it stands.

Serves 5 to 8.
