CUCUMBER SAUCE 
1 med. cucumber, unpared
1 tbsp. grated onion
1/4 c. mayonnaise
2 tsp. vinegar
1 tbsp. minced parsley
1/2 c. dairy sour cream
Salt and pepper to taste

Cut cucumber in half lengthwise and scoop out seeds. Grate (you will need about 1 cup grated cucumber) and drain. Combine with all the remaining ingredients; blend well and chill. Makes 1 1/2 cups.

Good as a dip, or a salad dressing when thinned with buttermilk. Also delicious spooned over hot wedges of Seafood Pie.
