EASY CHICKEN CASSEROLE 
1 box stuffing mix
2-3 lbs. chicken, cut up
1 med. onion
1 can cream of chicken (or mushroom) soup
1 can cream of celery soup
1 can evaporated milk

Salt and pepper chicken. Brown onion and chicken; drain grease. Prepare stuffing as directed on box, then put on bottom of casserole dish. Add chicken and onion mix on top. Mix soups with milk, now pour slowly over the top of the chicken and bake at 350 degrees for 45 minutes (until chicken is tender).
