CREAMY RICE PUDDING 
1 qt. milk
1/4 tsp. salt
1/2 c. rice
1/4 c. raisins
2/3 c. sugar
1 tsp. vanilla
1 (12 oz.) can evaporated milk
2 lg. eggs
Nutmeg

In large saucepan over medium heat, heat milk and salt to simmering; stir in rice. Reduce heat to low. Cover and simmer 45 to 50 minutes until rice is very tender and mixture is thick. Stir occasionally. Stir in raisins.

In large bowl with wire whisk, beat eggs, sugar, vanilla and evaporated milk. Gradually stir in the hot rice mixture. Pour into a greased casserole. Sprinkle nutmeg on top and set into a dish of hot water. Bake in a 350 degree oven for 40 to 45 minutes or until knife inserted in center comes out clean. Serve warm or refrigerate and serve cold.
