HARVARD BEETS 
1/4 c. sugar
1 tsp. salt
1 can (16 oz.) sliced beets, drained, reserving liquid
1/4 c. raisins
1 tbsp. cornstarch
2 tbsp. lemon

Combine sugar, cornstarch, salt in a 1 1/2-quart casserole dish. Gradually add lemon and liquid from beets, adding water if necessary to equal 3/4 cup. Blend until smooth. Microwave 4 to 5 minutes or until mixture boils and thickens. Stir every minute. Add beets and raisins. Microwave 1 minute or until heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
