SANGRIA
Juice of 2 sm. limes
1 lg. Valencia orange, cut into 1/4" slices
2 tbsp. concentrated orange juice
2-4 tbsp. Superfine sugar or to taste
3 c. red Burgundy wine
8-10 lg. ice cubes

Combine the lime juice, orange slices, concentrated orange juice and sugar. Pour the wine and mix hard and stir with a long handled wooden spoon until well mixed. Taste. If you prefer the Sangria sweeter, add more sugar.

Refrigerate for at least 1 hour, or until thoroughly chilled. Just before serving add the ice cubes, stir again and serve at once in chilled glasses. Or the glasses may be filled with ice cubes before adding the Sangria.

NOTE: Standard variations include 1/2 sliced lemon cut into 1/4" slices, 1/2 of a large apple, cut in half lengthwise, cored and cut into thin wedges. Inclusive to this amount, up to 2 ounces brandy, and club soda chilled (ice cubes optional).
