LEFTOVER FRIED RICE 
1 tbsp. oil
1/2 c. chopped onion
1/2 c. thinly sliced celery
3 c. cooked rice
1/2 c. cooked meat, diced
1/2 c. leftover cooked vegetable such as carrots, peas, broccoli or green beans
Soy sauce, to taste

Heat oil in skillet. Saute the onion and celery for a few minutes. Add the rice and stir to separate the kernels. Add the meat and vegetables and cook, stirring, just enough to heat through. Sprinkle with soy sauce. Makes 3-4 servings.

Yum! I actually didn't add in the leftover cooked veggies (but did add celery, onion, and bacon for the meet). This was a great way to have leftover rice.

I really liked this recipe. I didn't have any leftover meat so I fried up 1/2 cup of mushrooms with the onions and celery once they were tender. Mmm... Yummy!

Good recipe for leftover (takeout) Chinese fried rice. Along with the onions and celery. I added a tablespoon of sesame oil to the tablespoon of vegetable oil (would also be good with either avocado oil or olive oil), a clove or two of minced garlic and a teaspoon of minced ginger. Then I added the leftover fried rice, meat and vegetables per the original recipe. I let the individuals add soy sauce as desired. Yummy!
