BAKED CHICKEN LOAF 
4 c. chicken, cooked and ground
1 c. milk
1 c. chicken stock
1 1/2 tsp. salt
1/4 tsp. pepper
1 onion, diced
2 eggs, well beaten
2 c. soft bread crumbs

Mix all ingredients together and pour into a greased loaf pan. Bake in a moderate oven, 350 to 375 degrees for 1 hour or until firm and slightly brown. Serve hot or cold on a platter garnished with sliced tomatoes and watercress. If no chicken is available, use canned chicken broth or soup. Serve 6 to 8.
