FRENCH RAISED DOUGHNUTS | |
1 c. boiling water 1/4 c. shortening 1/2 c. sugar 1 tsp. salt 1 c. evaporated milk 1 pkg. dry yeast 1/2 c. warm water 2 eggs, well beaten 7 1/2 c. flour Pour boiling water over shortening, sugar and salt in large bowl. Add milk and cool until lukewarm. Dissolve yeast in warm water and stir into shortening mixture. Add beaten eggs. Stir in 4 cups of flour and beat. Add enough flour to make a soft dough. Place in greased bowl. Brush lightly with oil and cover with damp cloth. Chill until ready to use. Roll dough to 1/8 inch thick. Cut into 2 inch squares and fry in 360 degree oil until pale brown. Turn and brown other side. Drain on paper towels. Shake in paper bag with granulated sugar. You may add cinnamon if desired. Yield about 60 doughnuts. I make the dough during the evening, put in refrigerator until 1/2 hour before breakfast then proceed to cook. |
