PINEAPPLE - CARROT BARS 
1/3 c. honey
2 tbsp. vegetable oil
1 tsp. vanilla extract
1 egg
1 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 c. carrots, finely shredded
1/2 c. raisins
3 tbsp. skim milk
1 (8 oz.) can unsweetened crushed pineapple, drained
Vegetable cooking spray
1 tsp. powdered sugar, sifted

Combine first 4 ingredients in a medium bowl; stir well, set aside. Combine flour and next 3 ingredients; add dry ingredients to honey mixture, stirring well. Add carrots and next 3 ingredients; stir well. Spread mixture into a 13 x 9 x 2 inch baking pan coated with cooking spray; bake at 350 degrees for 25 minutes or until golden. Sprinkle with powdered sugar; let cool and cut into bars. Store loosely covered in refrigerator.

Makes 2 dozen bars.
