ORIENTAL CHICKEN FRUIT SALAD 
8 oz. carton pineapple yogurt
1/2 tsp. mild mustard
8 oz. can pineapple cubes, with liquid
11 oz. can mandarin oranges, drained
1/4 tsp. ground ginger
1/2 c. golden raisins
1 can sliced water chestnuts, drained
1 c. thin sliced celery
1 1/2 c. fresh or frozen pea pods, cooked tender crisp
1/2 c. "honey roasted" peanuts
3 c. chicken, cooked & cut into sm. pieces
Lettuce

If pea pods are fresh, clean and cook a few minutes to keep crisp, drain and cool. Frozen peas need less cooking time. Blend yogurt, pineapple liquid, mustard and ginger. Place all ingredients in a bowl, stir and serve on lettuce in plates. Garnish with thin slices of lemon. Serves 6 to 8.
