PAPA PERMAN'S SPLIT PEA SOUP 
7 lbs. smoked ham hocks
3 lbs. yellow onions
2 lbs. dried split peas
4-6 large potatoes peeled and cubed
2 lbs. carrots peeled and cut into 1/2 chunks

Add ham hocks and onions to a large stock pot fill with enough water to cover. Boil for 1 1/2 - 2 hours then remove meat from bones and add meat back to stock discard bones. Add peas and potatoes and boil an additional 45 - 60 minutes add carrots and boil 1 additional hour.
