DELICIOUS BROCCOLI WITH CHEESE
SOUP
 
1 sm. onion, chopped fine
1/3 c. mushrooms, chopped
1 stick butter, melted
1 lg. can chicken broth
2 pkgs. frozen chopped broccoli
2 c. half and half
2 c. Monterey Jack cheese, shredded
5-6 tbsp. flour

Saute onion and mushrooms in butter, then add flour and mix well. In large kettle, add broth, broccoli and onion mixture. Stir well and simmer for 40 minutes then add half and half and cheese. Stir until cheese is melted on low heat.
