BROCCOLI QUICHE 
Pastry for 9" pie
1/4 c. Parmesan cheese
2 c. chopped broccoli
1 c. shredded Monterey Jack cheese
1/4 c. sliced scallions
3 eggs
2/3 c. chicken broth
1/2 c. heavy cream
1/2 tsp. salt
1/4 tsp. Tabasco sauce

Prick bottom and sides of pastry with fork. Bake at 450 degrees for 5 minutes. Sprinkle with 2 tablespoons Parmesan cheese. Layer 1/2 the broccoli over Parmesan. Continue with layers of half the Monterey Jack and scallions.

Beat eggs. Add broth, cream and hot sauce. Mix well. Pour over mixture in pastry shell. Sprinkle with remaining 2 tablespoons Parmesan. Bake 10 minutes at 450 degrees. Reduce to 325 degrees for 20-25 minutes. Let stand about 5 minutes.
