TOASTED COCONUT BREAD 
1 c. toasted coconut
2 c. unbleached flour
1 tbsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg, well beaten
1/4 c. oil
3/4 c. sugar
1 tsp. vanilla

Preheat oven to 350 degrees. Mix milk, egg, oil, and vanilla together. Add to the dry ingredients. Stir until blended. Pour into a greased and floured loaf pan (9 x 5 x 3 inches). Bake 1 hour.
