TOASTED COCONUT BREAD 
1 c. toasted coconut
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt
3/4 c. sugar
1 egg
1 c. milk
1/4 c. oil
1 tsp. vanilla

Preheat oven to 350 degrees. Beat egg thoroughly; beat in milk, oil, and vanilla. Add dry ingredients and beat on low speed only until blended. Pour into greased and floured 9x5x3 inch loaf pan. Bake 1 hour. (I use small pans and bake for approximately 40 minutes.)
