VANILLA MUFFINS 
1/2 c. butter
1/3 c. sugar
1 egg, beaten
1 1/2 tsp. vanilla
3/4 c. milk
2 c. flour
3 tsp. baking powder
1/2 tsp. salt

Cream butter and sugar together. Add milk, alternating with dry ingredients.

Bake in heated and greased muffin tins at 425 degrees for 20 to 25 minutes. Yields 12 muffins.

Hi Hannah,

The difference in texture you get when you make scones is more due to the way scones are put together; usually by cutting the butter into the flour first, as you would when making biscuits.

If you get a tough and tunneling kind of result when making muffins, it's often due to them being overmixed.

Maybe the reason you though these resembled scones somewhat is that they weren't as sweet as you had expected?
