PEABODY VANILLA MUFFINS 
2 c. flour
1 c. sugar
2 tsp. baking powder
1/4 tsp. salt
2 tbsp. butter, melted and cooled
1 c. milk
1 egg
1 1/2 tsp. vanilla extract

Heat oven to 400 degrees. Grease muffin tins well. Sift flour, sugar, baking powder and salt into large bowl. Add melted butter to milk and egg. Beat well. Add vanilla. Make well in center in flour mixture. Pour milk mixture in all at once. Stir with fork only until all ingredients are moistened. Do not over mix. Fill muffin tins 3/4 full. Bake 15-20 minutes. Remove from tins immediately. Makes 12 muffins.
