BOWTIE PASTA WITH TOMATO BACON
SAUCE
 
6 slices bacon, diced
1 med. onion finely chopped
28 oz. can plum tomatoes
1 1/2 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
16 oz. pkg. bowtie pasta
1/4 c. heavy whipping cream
1 tbsp. chopped parsley

Cook bacon, drain on paper towels. Pour off all but 2 tbsp. of bacon grease. In grease, cook onion until tender. Add tomatoes, sugar, salt and pepper, stirring to break up tomatoes. Heat to boiling. Reduce heat to low, cover and simmer for 15 mins.

Meanwhile cook pasta (don't add salt) Drain. When pastas done, add into tomato mixture in skillet, stir cream and parsley, heat through (don't boil).

To serve, place pasta in large deep platter, spoon sauce over pasta, sprinkle with bacon.
