OVERNIGHT LETTUCE SALAD 
1 head lettuce, torn into bite size pieces
1/2 c. chopped celery
1/2 c. chopped green pepper
1 sm. red onion, chopped
1 (10 oz.) pkg. frozen peas, thawed
1 (8 1/2 oz.) can water chestnuts, drained and sliced
1 c. thickly sliced radishes (optional)
1 c. mayonnaise or salad dressing
Grated Parmesan cheese
1/2 c. bacon bits (optional)

Layer lettuce, celery, pepper, onion, peas, water chestnuts and radishes in large bowl. Spread mayonnaise or salad dressing over top, sealing layer completely. Cover with plastic wrap. Refrigerate 24 hours or overnight. Sprinkle with cheese and bacon bits. Toss before serving. 12 to 15 servings.
