TWICE BAKED POTATO CASSEROLE 
8 to 10 potatoes
1 bunch green onions, chopped (chop green part of stem for color)
8 slices crisp bacon
Milk
1 stick butter
8 oz. pkg. cheddar cheese
8 oz. sour cream

Boil potatoes, drain and prepare as mashed potatoes using milk and butter. Add sour cream, onions, bacon and 1/2 of the cheddar cheese. Place in casserole dish that has been sprayed with vegetable spray. Put remaining cheddar cheese on top and bake at 350 degrees until cheese is melted and slightly browned.
