HAWAIIAN BANANA BREAD 
1 1/4 c. flour
1 c. sugar
1/2 tsp. salt
1 tsp. baking soda
1/2 c. shortening
3 bananas, very ripe, mashed (1 cup)
2 eggs, well beaten
1 c. nuts, chopped

Sift first four ingredients. Work shortening as for a pie crust. Quickly fold in mashed bananas and the beaten eggs. Do not beat! Mix enough to combine the ingredients. Spoon into greased loaf pan. Bake at 350 degrees for about 1 hour.
