VEGETABLE CASSEROLE 
2 lbs. frozen mixture of carrots, broccoli and cauliflower, thawed
3/4-1 lb. Velveeta cheese
30 Ritz crackers, crushed
1 stick butter, melted

Thaw and place vegetable in 13x9 casserole. Slice cheese and layer over vegetables. Sprinkle crushed crackers over cheese and then pour melted butter over top. Bake, uncovered, for 30 minutes at 350 degrees.

NOTE: Only use enough crushed crackers to cover casserole. Use only Velveeta cheese.
