DEVILED CRABS 
1 lb. blue crab meat
1 sm. onion, diced
1 sm. bell pepper, diced
2 pieces celery, diced
4 reg. hamburger buns, ground into crumbs
3/4 tsp. salt
1 tsp. pepper
2 lg. datil peppers, ground
Oil for frying

Pick over crab carefully to remove any shell or cartilage. Set aside. Combine all other ingredients except oil. Gently fold in crab meat. Pat into cakes about 2 1/2 inches in diameter. Heat oil to 400 degrees and carefully slip cakes in. Deep fry for 3 or 4 minutes. Drain and serve immediately. Yields: 12 patties about 2 1/2 inches in diameter. Preparation: 10-15 minutes. Cooking: 3-4 minutes per batch.
