NANA'S TURKEY STUFFING 
2 lg. loaves of bread (white or soft wheat)
3 eggs
1 tsp. salt
Black pepper to taste
1/2 lb. butter
1 tsp. sage
1 lg. onion, diced
2 stalks of celery, diced (optional)
Broth from turkey giblets and gizzards
Giblets (optional)

Cut or break bread into small pieces. Let it dry out overnight. In large pot, boil giblets and gizzard for about 1/2 hour or until a good broth is made. Discard giblets or chop and put in dressing if you prefer.

Combine bread, eggs, salt, pepper, butter, sage, onion and celery. Pour broth over the mixture slowly, and mix as you pour. The butter will melt as you add the hot broth. Mix until very moist, but not too mushy. Stuff turkey and place remaining dressing in 9 x 13 inch pan. Cover with foil and bake 45 minutes at 350 degrees.

I have been looking for a recipe that approximates my Mom's, which she used in the 1930's & 40's. It was handed down to her by my Grandmother - circa 1900 to 1930. Will use it this Thanksgiving. Thanks.
