MY FAVORITE STUFFED PEPPER | |
6 green peppers 4 slices bacon or salt pork 3/4 lb. chopped ham 1 c. onions, chopped 1 tsp. salt 1/2 tsp. paprika 2 c. cooked rice 1/2 c. water Chop bacon or pork. Cut stem and stop from each pepper. Remove core and seeds. Saute bacon or pork in skillet until crisp. Add onions and cook until slightly browned. Add ham and brown. Stir in salt, paprika, and rice. Fill peppers with mixture. Place peppers in greased pan; add water. Cover and bake in moderate oven at 350 degrees for 40 minutes. Remove cover and bake 10 minutes longer. Top with a bacon slice during the last baking period, if desired. Serve when bacon is browned or after 40 minutes of baking, each pepper can be topped with an egg, sprinkles with buttered bread crumbs and baked until eggs are set. |
