AMISH LEMON SPONGE PIE 
2 tbsp. butter
1 c. sugar
3 eggs (separated)
3 tbsp. flour
1/2 tsp. salt
Juice and rind of 1 lemon
1 1/2 c. hot milk

Cream butter, add sugar and egg yolks, beat until fluffy.

Stir in flour, salt, lemon juice, grated rind and hot milk.

Fold in stiffly beaten egg whites.

Pour into 9 inch unbaked pie shell and bake 40 minutes at 400 degrees.
