EASY CHEESY BUN 
1 env. active dry yeast
1/2 c. warm water
2/3 c. soft yellow Cheddar cheese
2 tbsp. sugar
1 tsp. salt
1 egg, unbeaten
2 tbsp. butter, melted
2 1/4-2 1/2 c. flour, sifted

Sprinkle yeast over warm water (about 105 degrees) in a mixing bowl. Let stand 5 minutes. Add cheese, sugar, salt, unbeaten egg, melted butter, and 1 cup of the flour. Beat two minutes,, until the cheese is well blended (with electric mixer, use low speed). Gradually add remaining flour to form a dough; mix well. Fill well greased muffin cups about half full.

Cover and let rise in warm place until doubled in bulk, 1 to 1 1/2 hours. Bake in moderate (375 degree) oven, 12 to 15 minutes or until deep golden brown. Makes 12 buns if muffin wells are each about 3 inches across the top and 1 1/4 inches deep.
