5 ripe apples A knob of butter 9 oz. plain flour 3-5 egg yolks A little salt 1 slightly heaped tbsp. sugar 1 packet Vanillin sugar (from Japanese or Deli stores) 3/4 pt. & 5 tbsp. milk 3-5 egg whites 2 1/2 oz. butter A little sugar for sprinkling Peel and dice the apples, stew in butter, then leave to cool. Sift the flour into a bowl, make a well in the middle and pour in the egg yolks beaten with a little of the milk, salt, sugar and the Vanillin sugar. Starting from the middle, stir the egg yolks into the flour and gradually add the milk, stirring all the time to avoid lumps. Stir the cold apples into the batter. Whisk the egg whites until stiff and fold them carefully into the batter. Heat the fat in a frying pan and pour in enough batter to cover the bottom of the pan to a depth of about 3/8 inch. Fry the underside light yellow, then tear into small pieces with 2 forks. Brown the pieces well, turning frequently. Repeat until the batter is used up. Serve sprinkled with sugar. Frying time: About 10 minutes. |
