APPLE CAKE WITH TOPPING 
1 c. sugar
1/4 c. butter, softened
1 egg
1 c. flour
1 tsp. baking soda
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Dash of salt
2 c. apples, peeled and diced
1/2 c. nuts

Cream together sugar, butter, and egg. Add flour, soda, cinnamon, nutmeg and salt. Stir in apples and nuts. Pour in 9 X 9 baking dish; bake at 350 degrees 40-45 minutes.

TOPPING:

3/4 c. sugar
2 tbsp. corn starch
1/4 tsp. salt
1 c. boiling water
2 tbsp. butter
1/4 tsp. lemon extract
Dash of nutmeg
Dash of cinnamon

Cook over low heat until clear and thick. Serve warm over cake.
