HOMEMADE PITA BREAD 
3 1/2 cups all-purpose flour
1 1/4 cups water
2 tbsp. olive oil
1 tsp. salt
2 tsp. sugar
2 tsp. dry yeast

Use bread maker dough setting (wet ingredients first) just for kneading. So the order in which you would place in bread maker will be: water, oil, salt, flour, sugar and yeast.

Once the bread maker is done kneading the dough rub additional oil on the dough so it does not dry out while rising. Leave for 1 hour to rise.

Cut dough to even circles on a floured surface and roll dough into 1/2-inch thick even circles.

Leave on a floured surface with waxed paper underneath to rise for 10 minutes.

Flip the pita bread upside down from the floured surface and onto a floured and oiled baking sheet.

Bake in a preheated oven at 500°F (or as high as your oven will go) for 5 minutes only, not more than that. A pocket will form. Take out immediately.

Leave pita breads inside wrapped towel (not paper towel) to rest and cover them.

Makes about 10 pita breads.
